6/80 ✅Cardio Flow was definitely tough. My first impression of the name was that it might be a little less intense than the other 5 workouts. 🤔 W R O N G 🚫😂 It was constant work for 30 minutes! yes, i still drink coffee 🤗 a lot of people feel strongly that coffee doesn’t work well with their body. i’ve seen so many people try to go to something like herbal coffee or matcha instead... and i completely respect that!! it’s not everyone’s cup of joe in terms of their wellbeing ☕️ but for me, i actually find that it HELPS me and my digestion!! plus it tastes good, so i don’t feel any reason to restrict 🤷🏻‍♀️ you do you (and whatever makes you feel 💯)!! . . . . french toasted @foodforlifebaking cinnamon raisin ezekiel + almond extract + warmed berries + @traderjoes VT maple syrup + @fage + homemade gingerbread granola, all with a cup of joe!

💜 I was starving after my run today (a runner’s problem). My mom and I went to a Thai restaurant (so basic 😂) and I couldn’t take my eyes off this dish on the menu. Fried fish with Thai styled chili paste that comes with a side of jasmine rice. I devoured the whole fiesta and left nothing else on the plate. Yes, I’m 100% aware that it’s not a grilled or baked fish. Did I feel guilty? Absolutely NOT. Did I feel bad about not making the “healthiest choice”? Hell NO. Moral of this story: don’t let your healthy lifestyle kills away from your life. In October I became unemployed and as the sole income in the house I wasn't quite sure how it was going to work out. It was crazy and unreal what a blessing the time off was, how financially I made it, and how I am now employed by 2 companies with amazing positions. I was able to be available for my kids in ways that would have never happened had I been working. I discovered that I could live on less money than I thought and still afford my Plexus!!! And I am enjoying both my new positions so much that it almost doesn't seem like work! This showed me more than anything that things really do happen for a reason and if our desire is there we can make things happen. I put my health first during my unemployment and during this time kept my mind stable because my gut was healthy. It really is a gut brain connection! Why do I want to work for myself? Because then I am the only person who controls what my income looks like. Because then when there is craziness all around me in the world, I can find my happy place in my work/passion. Because then 20 years from now I can look back and know I did everything possible for me to excel in life. Because on the weekends when we have free coffee and rewards points to use, I can hang out with my daughter and both of us get to relax and enjoy our rewards. Because I can become a more present mom to the most important gift I was ever given. Because nothing gives me more satisfaction than being able to work from where ever, doing what I love and still being able to provide for my family ❤️

Slow-Cooker Chinese Beef and Bok Choy Recipe courtesy of. Food Network Kitchen Total: 8 hr Prep: 25 min Cook: 7 hr 35 min Serves 4 Calories 517 per serving Ingredients 4 leeks (white and light green parts only), trimmed, halved lengthwise and cut into 1-inch pieces 6 cloves garlic, unpeeled 4 thin slices ginger, unpeeled 1 red jalapeno pepper, seeded and thinly sliced 3 tablespoons all-purpose flour 1 1/2 pounds beef chuck roast, trimmed 1/4 cup hoisin sauce 1/4 cup Shaoxing rice wine, mirin or dry sherry 3 tablespoons soy sauce 2 tablespoons packed light brown sugar 4 heads baby bok choy, cut crosswise into 2-inch pieces 2 cups cooked white rice, for serving Directions Combine the leeks, garlic, ginger and jalapeno in a 7-quart slow cooker. Sprinkle in the flour and toss to coat. Nestle the meat in the vegetable mixture. Whisk the hoisin sauce, rice wine, soy sauce, brown sugar and 1/3 cup warm water in a bowl; pour over the meat. Cover and cook on low, 7 1/2 hours. Remove the meat to a cutting board and thinly slice against the grain; remove and discard the garlic and ginger. Return the meat to the slow cooker along with the bok choy. Increase the heat to high and cook, uncovered, until the bok choy wilts, about 5 minutes. Serve with the rice.
