Still dreaming of my authentic Southern breakfast.. Pictured is the Bubba: buttermilk biscuit open-faced with cheddar scrambled eggs, smothered with their housemade sausage gravy. Sided with turkey bacon and hash browns. 🤤
Ok so this gravy is a little special. It requires a little extra work but the flavors are so worth it.
1 cup heavy whipping cream
3 cloves of garlic
2 twigs of rosemary
3-4 cups of cooking juices from whole chicken (previous recipe)
Black pepper freshly ground
1/4 cup salted butter
1/4 cup of sifted flour
First taking the heavy whipping cream and grate the three cloves of garlic into it, add the rosemary sticks. Let's this cook on low for 5-10 minutes. The mixture should not come a boil just let it simmer. Once done take out the rosemary twigs (there's no need to strain the mixture) Add the cooking juices and butter and let it heat up to a simmer. Then slowly add the flour until the mixture thickens. You may need less than 1/4 cup it depends on how much cooking liquid you get from your chicken! Add black pepper at the end to your taste!
