Oats for dinner and life update☺ . The past week has been crazy hectic as all my teachers are preparing for midterms and giving us those last minute tests!😩 I have been so stressed that I haven't even had time to eat breakfast before running out the door, yikes!😣 For the first time in a while, I had sugar in the form of a candy cane on Friday because some friends bought me some. I felt extremely festive and don't regret it one bit but I'm back to the no sugar grind again! 😆😉🎄 . Definitely spent the day today relaxing and doing chores to somewhat get my life back together!👍 Then I made a quick bowl of #zoats for dinner as I watched some old Disney movies and chilled.😊Plus I finally got more pumpkin to add to my oats and give them that golden-y orange color! 👌🙌 . Dinner dEATs ➡ a large bowl of pumpkin zoats topped with some fresh strawberries and blueberries, Kirkland Signature creamy almond butter, and a drizzle of orange blossom honey! YUM! 😋

#breakfast for #dinner tonite. Tried out a couple cauliflower and broccoli patties 🥦 from @traderjoes and they were really good! They tasted really good kind of like a hash brown the texture was similar to a hash brown as well and just a few very basic all natural ingredients. Paired them with an egg 🍳 plus eggwhites and spinach scrambled and topped it all off with @truefoodsinc ketchup. Just found this ketchup and was excited to find an all natural ketchup made from veggies not sugars and chemicals 👍🏻

I was feeling creative last night so I made these delicious no-bake (soy free and gluten free) Peanut Butter Coconut Bars off-the-cuff without a recipe ✨🙈 // So if you’re making these, you’ll certainly have to keep tasting until you find your perfect match, but for now, here are my estimates! // I started out with cashews, dates and rolled oats and used about 1/3 of each to make up my main mixture (you can be liberal with this, just make sure not to add in too many oats or it will be dry)! Next I added in about a tablespoon of peanut butter and a handful of peanuts (because I ran out of PB hehe), a liberal “dash” of vanilla extract, pink Himalayan sea salt, 1 tsp of coconut oil, a dash of cinnamon, a tiny bit of maple syrup and blend all of that in the good processor as you go! Then I added in some unsweetened coconut flakes for texture and flavor and 100% cacao unsweetened chocolate! Take a baking sheet or pan with parchment paper and flatten out your mixture onto the paper evenly. Pop that in the freezer for about 20 minutes and melt some of your leftover unsweetened chocolate on low heat until fully melted through. Take your “cookie batter” out of the freezer and pour the liquidy chocolate goodness evenly over the flattened “batter.” Top with some coconut flakes or any superfood of your choice and freeze for another 10 minutes. Then take I.t out, slice it up and enjoy with a tall glass of almond coconut milk 😉 // Go vegan baby!! Took a break but it’s really cool to be back in the kitchen just playing around with foods❤️ The last week and a half has been really tough for me being out of the gym. Sooo instead of being super depressed about it I am trying to give my time to other things that need my attention and also things I love doing. Besides the gym the kitchen is another one of my favorite places to be. So with this vegan experiment I decided to take some of my favorite foods and make them vegan... and holy hell its pretty fun but still so delicious. If y’all want an easy vegan pizza recipe then this is a good place to start! Chicken pesto spaghetti squash 👩🏼‍🍳🍽 🔸1 chicken breast 🔸1/4 cup mushrooms 🍄 🔸1/2 cup Roma tomato 🍅 🔸1/2 spaghetti squash 🔸3 tbsp organic pesto Tips for the spaghetti squash: 1) cut 4 deep slits into the squash 2) microwave for 4 minutes to soften the squash for cutting 3) cut the squash in half and scrap the seeds out with a spoon 4) smear olive oil, salt, and pepper all over the inside of the squash 5) place the squash open-side facing down on a baking sheet 6) bake for 30 minutes at 375 7) use a fork to fluff the squash into stringy "pasta"

For Day 4 of my 12 Days of #HealthyHolidayTreats 🎄🍪, how about some frosted protein sugar cookies that taste like the real deal🤩… with only ONE GRAM of sugar per cookie?😳 Seems like an oxy moron doesn’t it: a sugar-free sugar cookie?🤨 Well, believe it! Each full-sized, soft-baked cookie is just 80 calories with 5 grams of protein and 3 grams net carbs. These aren’t exactly “low fat” at just under 5 grams per cookie, but then again, you shouldn’t be filling your macros with 100% cookies anyway (variety is the spice of life🍅🥦🥑🍌🥕🍪). They say that the early bird catches the worm. In my case, the early bird gets paid a visit by a beautiful reef shark (its uncle, the manta ray is just chilling below as I eat and soak in this glorious view). This vegan breakfast with oat and quinoa porridge topped with pear, kiwi bluberries and almond milk would be perfect for a pre-workout breakfast (and for me this morning, it's definitely a 'leg day' workout as I'm snorkling again today but this time with my friends, the turtles).
