Transition time is hard, sometimes I like to stress eat and will have a lovely bowl of frosted flakes before bed. Then I wake up and wonder why I feel shitty! It's all a choice. This week's smoothie is super green. Yogurt, peanut butter, chia seed, hemp seed, zucchini, spinach, banana, blood orange, nectarine, oats, and grassfed whole milk.
The boy gets 2 or 3 tbsp a day most days, usually at snack time!
Super quick beet-arugula-goat cheese flatbreads for dinner tonight... Topped with sesame and chia seeds... I had nothing made and needed to use the beet hummus I made earlier in the week... When I don't know what to make, I usually have the ingredients for some tatziki or hummus on-hand and start building some quick naan 'pizzas... No recipe needed... just whatever you have handy. Salads are more fun on sunny days. Today was not a good salad day, but this was still pretty tasty. Hearts of palm (🧡) purple onion, mushrooms, baby spring greens with a squeeze of 🍋 I stopped using salad dressings a long time ago, and now I don’t even like them messing up the taste of my food.
My house smells amazing!!! I’m loving playing with my @lodgecastiron Dutch oven! This chicken was inspired by the wonderful @busyinbrooklyn! First I caramelized some onions, then I added 1 head of garlic (peeled) and shallots chopped, I sautéed them with the onions for a few minutes. I took the onion mixture out and browned the chicken on both sides. Then I layered chicken, onion mixture, and fresh #thyme sprinkled some salt and let it baked covered at 350 for 1 1/2 hours. Ésta ensalada tiene espinacas sazonadas como base; papa y betabel asados con romero (por que no hay combinación mas deliciosa que verduras de raíz con romero 😛😛😛😛); semillas de hemp; queso de almendras y un aderezo de tahine con limón cremoso. (No apunté la receta del aderezo pero mezclé tahine, aceite de oliva extra virgen, limón, vinagre de vino tinto, miel de maple y sal.) Enserio que es un must tener tahine para variarle a los aderezos 💫
No saben como ha cambiado mi salud y mi energía por comer comida real (no procesada) y basada en su mayoría en plantas. Les recomiendo muuucho aumentar su ingesta de verduras que en promedio los mexicanos consumen solo 3.6 días a la semana cuando lo recomendado son mínimo 5 porciones al día 😱 #eatyourveggies
Feeling deep af today since it’s the first time I’ve been able to really think leisurely this week (exams). Do you ever feel like you’re just doing the exact right thing? At the right time and place? Totally feeling that this week. Taking care of myself and my relationships, finding joy in the little things, and having faith in the unknown 😌 It’s a good feeling.

This green chickpea curry has been amazing all week👌I adapted a super simple recipe from @pinchofyum. Details below👇
Cut one sweet potato into cubes and sauté in a large pot. Add broccoli once the sweet potatoes are soft. Cook for a few minutes and add a few tablespoons of green curry paste and one can of coconut milk. Let the curry cook for about 10 minutes and add one can of chickpeas👍
I’ve been eating this with brown rice and steamed spinach, and had an apple and my favorite @rxbar on the side ☀️
I love salad. I love breakfast. And surprise, I love salad, for breakfast 🥗 It’s a simple way to load up on greens and healthy fats first thing in the morning, along with a little bit of protein from that golden yolk. It might be chilly and overcast here in LA, but at least I can make the sun come out from behind clouds of green spinach 😉☀️.
