GUILT-FREE PALEO PROTEIN PANCAKE STACK RECIPE:
Mixture Ingredients: • 2 tbsp natural crunchy peanut butter (@mayversfood Dark Roasted is my fav!) • 2 tbsp organic coconut flour • 1 medium very ripe banana • 3 free range eggs • Good Sprinkle of cinnamon ground • 1 tsp vanilla extract • 1 tsp maca powder • 2 tbsp pasteurised collagen powder • 1 tbsp cacao nibs
Ingredients to Garnish: • 1 cup fresh or frozen blueberries and raspberries • 3 tbsp natural coconut yoghurt • Paleo Granola OR raw activated nuts and seeds mix
Blend all pancake mixture together (minus the cacao nibs) in a NutriBullet or blender.
Add cacao nibs to blended mixture and stir in with spoon.
Heat a large non-stick fry pan over low-medium heat. I cook with an organic butter, but you can also use coconut oil.
Once butter/oil is in the pan, scoop 2-3 tbsp of pancake mixture into frypan and cook til bubbles surface in mixture. Flip pancake over and cook until it is cooked all the way through.
Repeat process til all mixture is used up. ** Be careful not to overheat the pan or have the heat too high - coconut flour is easy to burn.
Stack pancakes onto a plate, and serve with garnished ingredients.
