This breakfast is so easy to make it's ridiculous. As you know I love @costco, and I found these dehydrated potatoes there from @Idaho.Spuds. So easy to fry up! Then I added stir fry veggies that I had made for dinner the night before, and fried up vegan gf breakfast sausage patties from @SOLCuisine.
It took less than a minute to reheat my veggies, four minutes on each side to fry the breakfast patties, twelve minutes to let the potatoes hydrate, then only about four minutes to fry on each side, and boom. Easy vegan breakfast! I also drizzled a little maple syrup on my veg sausages cuz it reminds my brain of my pre-vegan days ;)
For my Chai latte I made the tea, added some coconut milk (Thai Kitchen organic coconut milk... thank you Costco), and some Agave syrup. Yuuuum.
It's always great to make everything you eat from scratch, but we don't always have time for that, and transitioning to vegan is hard enough. So don't stress yourself out trying to cook elaborate fresh meals every day. It's a recipe for failure, especially in the beginning. Happy eating!
There’s nothing like soup for dinner on a cold day!
1 pkg riced cauliflower
6 strips cooked bacon
1 can coconut milk
1 C broth
1TBS minced garlic
Veggies of choice
I used leeks, bay leaf,fresh mushrooms, and fresh parsley, rosemary and marjoram. You could add celery, jalapeños broccoli,or carrots and could substitute ham for the bacon. I just threw everything in a pot and cooked it until the veggies were tender. Before serving I added shredded sharp cheddar and green onions.

Ratings: 4.5/5; I loveeeeee Vietnamese dessert drinks omg thanks pops hehe haven’t had it in so long! We got two drinks, one for my mum and one for me and my dad to share. Back then, I usually got the Bambu’s favorite (one in pic), which is mixed with coconut milk, grass and pandan jelly, and red tapioca 😋 I would probably say that the drink was more heavier on the grass jelly flavor. The drink that my dad and I shared, Che Ba Mau (Three colored drink: Red, White Mung Bean, Taro, Pandan Jelly, and Coconut Milk) was really flavorful! Service is really good. The restaurant has some seatings, but it’s just a litto dark. Free parking in the back!
