VEGGIE MEATBALLS Spaghetti and Vegetarian Mushroom "Meatballs" Having trouble deciding what's for dinner? Not knowing whether you want something savoury or meaty? Well look no further! The answer is in these meatless meatballs. They have the perfect crunch to end off a hard day's work. Meat-lovers and children will enjoy it as well. For a spicy twist, add some chopped chillies to the sauce - even the hard-core meat lovers won't be disappointed in these! MEATBALLS Serves 2 3tbsp Olive oil 1 medium Onion, finely chopped 250g mushrooms, chopped 1cup oats 1cup breadcrumbs 1/2 cup parsley, chopped 3 garlic cloves, minced 2 eggs 2 tsp Balsamic Vinegar 2 tsp dried oregano Salt and pepper to taste Method: 1. In a large frying pan add the oil and sauté the onions, 7 minutes. 2. Add the mushrooms, fry over medium heat until all the water evaporates and mushrooms are brown, 10 minutes. 3. Add garlic and stir through mixture, transfer to a mixing bowl and allow to cool. 4. Once cooled down add the rest of the ingredients and refrigerate for 2 hours. 5. When ready form little balls(size is your choice) and fry over medium heat until the meatballs are brown, 4 minutes. TOMATO SAUCE 1(400g) tin Tomato and onion mix 1 tbsp balsamic Vinegar 1tsp parsley, chopped 2tsp white Pepper 1tbsp brown Sugar salt to taste Method: 1. In saucepan, add the can of tomato and onion mix and simmer, 2 minutes. 2. Once heated, remove from stove and blend with a hand blender. 3. Add the rest of ingredients and simmer, 8 minutes. Tip : If you want your sauce sweeter add more sugar or if you want it spicier add some chopped chillies. SPAGHETTI 1/2 packet (250g) spaghetti 500ml water Salt Method: 1. In a large pot bring water to a boil and add salt. 2. Add the pasta and cook for 10-15 minutes, stirring occasionally. 3. Strain pasta and rinse with cold water. VALENTINES DAY Are you looking to be a tad more adventurous this Valentine’s? Do you feel like skipping the cliché move of buying roses and boxed chocolates for your significant other this year? Give this recipe a go and discover your inner baker this Valentines Day. Strawberry Centered Vanilla Cupcakes with a Rum Buttercream Frosting Makes 6 Cupcakes: 1 cup self raising flour 1 tbsp baking powder Pinch of salt 1/2 cup buttermilk 2 large egg whites 1/4 cup butter, room temperature 1 cup brown sugar 1 tsp Vanilla essence 1/4 cup of Red Heart Rum Preheat your oven to 180’ C. Line a muffin tin. Sift the flour, baking powder and salt together. Whisk the buttermilk and egg whites together. In a mixer, beat the butter, sugar and vanilla essence together until smooth. Add 1/3 of the flour mixture and mix to combined. Add the buttermilk and egg white mixture. Mix well and add the rest of the dry ingredients. Whisk for 2 minutes until smooth and spoon into the prepared tin. Bake for 20-25 minutes. Strawberry Centre: 6 strawberries, halved 1/4 cup caster sugar Juice of 1 lemon 3 tsp corn starch 1 tbsp water Combine the strawberries, sugar and lemon juice in a small saucepan over medium heat. Boil for 8-10 minutes until tender . Whisk the cornstarch and water together and add it to the cooked strawberries and boil, 2 minutes until thick. Allow the jam to cool and place in a piping bag fitted with a small nozzle. Once the cupcakes have cooled, pipe the jam into the centre of each cupcake. Rum Frosting: 1/2 cup butter, at room temperature 3 cups icing sugar 1 tbsp Vanilla essence 4 tbsp cream 3 tbsp rum Whisk the butter in an electric mixer for 7 minutes until pale and fluffy. Add the icing sugar, vanilla essence, cream and rum and beat until smooth, 2 minutes. Place the mixture in a piping bag and decorate the tops of each cupcake - Natasha Jacobs
