Oatmeal Raisin Quick Bread is what comfort tastes like to me. All the cozy cinnamon-y flavor of an oatmeal raisin cookie baked into a soft, sweet loaf. It’s dessert with the whole grain thing as a bonus.

Have you got a case of Monday-itis and can’t be bothered with dinner? Seriously you can forget the take out with this EASY Chinese beef & broccoli noodles. On the table in 20 minutes and just as good as your local restaurant! I promise! – N x 😍
Chinese Beef and Broccoli Noodles | Serves 4
350 - 400 g / 12 - 14 oz beef rump or fillet , thinly sliced (or other quick cooking cut of beef)
1 1/2 tbsp peanut or vegetable oil
2 garlic cloves , finely chopped
1/2 onion , finely sliced
1 large head broccoli , broken into small florets
400 - 450g / 14 - 15 oz egg noodles (hokkien, lo mein, singapore - from the fridge)
1/2 cup / 125 ml water
1 tbsp cornflour / cornstarch
2 tbsp dark soy sauce (Note 1)
1 1/2 tbsp light soy sauce (Note 1)
1 1/2 tbsp Chinese cooking wine/Shoasing wine (Note 2)
1 tsp white sugar (omit if using Mirin)
1/8 tsp Chinese five spice powder (not critical)
1/4 tsp pepper
1. Sauce: Place water and cornflour in a bowl, mix. Then add remaining ingredients and mix.
2. Beef: Place in a bowl and add 1 1/2 tbsp Sauce. Mix.
3. Broccoli & Noodles: Bring a large pot of water to the boil. Add broccoli, cook for 1 minute. Add noodles then after 15 seconds, use a wooden spoon to separate the noodles then immediately drain (don't have the noodles in the water for more than 1 minute).
1. Heat oil in a large skillet over high heat.
2. Add garlic, quickly stir. Add onion and cook for 1 minute until it's tinged with brown.
3. Add beef and cook until it changes from red to brown.
4. Add noodles, broccoli and sauce. Toss together for 1 1/2 - 2 minutes or until Sauce thickens and coats the noodles.Garnish with shallots and sesame seeds.

Made a stop at @sweetberriesgv today for the first time! I ordered the monte cristo, and was not disappointed. The thick layering of ham and turkey served warm with the melted cheese just works so well, as well as the dusting of powdered sugar for a sweet contrast to the savory flavors of the rest of the meal. Sadly, I did not order any custard but I’ve heard great things so I will be returning soon to try it!! I have some food trips planned for the next few weeks so stay tuned :)
As I reflect upon a week in Sri Lanka rich in contrasts and emotions, during which I felt isolated from people and connected with nature, with old struggles making an unexpected appearance in my days and nights, pushed myself physically on the mat, and felt like your ultimate misfit, am munching on my favourite pick me up pasta, a little like going to my safe place. I love this recipe which dates back to my Roman days. Boil water and cook broccoli until crunchy • cook pasta in the same water broccoli were boiled in • in a pan, add crushed garlic, red and green peperoncini • add a few bits of pancetta • toss in pasta • add a dollop of mascarpone • parmigiano.

Sunday Fun(fetti) Day! Again. Every Sunday should really be funfetti day if we're being honest. This week on the blog, I shared the BEST homemade #fromscratch funfetti cupcakes recipe. They're a little different from most cupcakes you ever made because instead of starting with the wet ingredients and adding in the dry, you start with all of the dry ingredients and mix in the wet. The result is AMAZING. They are soooo good. And pretty too!

I’m in a mood where nothing healthy sounds good. It’s a real problem. Ironically THESE spinach quinoa egg cups actually sound DIVINE. Maybe with a side of Cookie Dough? That alright? 🤷🏼♀️😆
• 2 cups cooked quinoa
• 1 cup chopped mushrooms (mushroom variety of your choice)
• 8 oz frozen spinach, thawed and strained
• 1 teaspoon garlic powder
• 1/2 teaspoon black pepper
• 1/4 teaspoon sea salt
• 3 eggs
• 4 oz sharp cheddar cheese + more for topping (or dairy-free alternative)
Preheat oven to 350 degrees F
Prepare muffin pan by lightly greasing to cooking spray
In a medium bowl mix together quinoa, mushrooms, spinach, garlic powder, black pepper, salt, eggs, and cheese.
Spoon 2-3 Tablespoons of mixture into each muffin tin. Filling to the top. Top with additional cheese.
Bake for 18-22 minutes.
