I could keep on going for ages, but these are just some fun facts about me... here we go!
1-I am probably the most opinionated and most impatient person you’ll ever meet, but I try to keep to myself and shut up as much as I can since my opinions can lead to heated debates and if I told my friends half of what I’m really thinking, chances are my honesty would lead me to lose all of them.
2-Romanian happens to be my mother-tongue, although I am much more fluent in English and French. English remains my preferred language, though. German, I can understand some of it while I can work my way through a conversation in Spanish.
3-I learned Spanish and German because I’m studying to become a certified translator, but I’ll stick to French and English (maybe some Romanian here and there). Legal translation is what interests me most and I plan on taking a class on it next fall.
4-Psychology is something that has always fascinated me (probably has something to do with the fact that my mom studied to be one in Romania) and I have read the most on EDs and mood disorders because those two fields are the most interesting to me. I love learning about psychology so much I even bought the DSM-5 and read through it, and I psychoanalyze people without meaning to most of the time. One thing I do not enjoy learning about, though, are spectrums. I am not saying that psychology isn’t complex and broad, but spectrums are too broad and complex for me to properly understand them.
5-I do not like to get into a debate unless I am educated on the topic at hand because I’m the “think before you speak” kind of person. If I feel like I don’t know enough to properly debate on something then I simply say so instead of saying something ignorant.
9-I’m actually not a bitch, I’m just shy.
12-Seriously. There are stuff in the fridge with my name on them because they are mine and I hate it/get mad if someone takes my stuff. Just ask my dad, he’s made that mistake a few times. Bottom line is: if I bring something with me or cook something, it’s for me and not for anyone else. I love you, but don’t touch my stuff and don’t ask if you can have some either because the answer is no. (Continues ⬇️)

SUPER FRESH GRILLED SHRIMP SALAD WITH HONEY MUSTARD VINAIGRETTE

FOR THE SHRIMP:
1 ¼ pounds shrimp, peeled and deveined
2 tablespoons chopped parsley
2 cloves fresh garlic, minced
1 tablespoon lemon zest
3 tablespoons olive oil,
½ teaspoon salt
FOR THE SALAD:
3 hearts of romaine (Sliced down the center with end intact)
2 ears of corn, husked
2 bell peppers (yellow, red, orange whatever you like)
1 hothouse cucumber, diced
1 large avocado, diced (optional)
2 ½ cups of chopped grape tomatoes
HONEY MUSTARD VINAIGRETTE:
1 tablespoon yellow or dijon mustard
2 tablespoons white wine vinegar
1-2 tablespoons honey
⅓ cup olive oil
SHRIMP: Add the parsley, garlic, lemon zest, olive oil and salt in a bowl. Add the shrimp and stir to combine. Let marinade for 10-15 minutes while you chop all the veggies and prepare the dressing. Place 4-6 shrimp on wooden skewers before grilling.
VINAIGRETTE: Whisk together the mustard, vinegar, and 1 tablespoon of honey with a pinch of salt. Continue whisking as you stream in the olive oil. Taste and adjust with an additional tablespoon of honey if you prefer your dressing a little sweeter.
GRILLING: Preheat the grill and spray with cooking spray if desired. Grill time will vary for the ingredients so start with the corn. Spray the corn with cooking spray, season with a pinch of salt and roast, turning every 4-5 minutes for about 15-18 minutes total. Add the whole bell pepper next and grill for 1 minute or longer if you’d like it to char a bit. Add the shrimp skewers near the end of cooking time, they’ll take about 2-3 minutes per side. Spray the romaine hearts with cooking spray and sprinkle with a tiny pinch of salt, grill for about 2-3 minute on each
