Ayam Bacem Pedas / Sweet & Spicy Fried Chicken
Hi everyone😉 This morning I found a bag of chicken wings in the freezer. The cool air and overcast skies surrounding Malang made me think of serving these chicken wings in a sweet spicy flavor, which seemed appropriate to be enjoyed in this weather. Traditionally, I should have used fresh coconut water to boil the chicken wings with the spice. But what is the power, the cold morning makes me too lazy to visit the market to buy it. Chicken wings 1 kg
Palm sugar 200 gr
Candle nut 10 grains
Coriander 1 tablespoon
Garlic 8 cloves
Shallot 5 cloves
Sweet soy sauce 9 tablespoons
Salt 1 tablespoon
Galangal, crushed 5 cm
Salam leaves 6 sheets
Powdered chicken broth 1 teaspoon
5 pieces of cayenne pepper
1.5 liters of coconut water
How to cook:
1.Boil chicken with 3 bay leaves, let chicken droppings float in the water.
Rinse chicken with running water.
2.Puree garlic, onion, hazelnut, coriander, salt, powdered broth with a blender.
Place the rinsed chicken in a clean saucepan, add the finer spices, galangal, bay leaves, coconut water and brown sugar.
3.Boil the chicken with medium heat until the seasoning is absorbed and the coconut water is low. Turn off the fire. Wait until the chicken is really cold, and fry briefly in the hot oil,only until the chicken is golden brown.
