FAT BALL BLISS 😍😍 I spent years thinking fat was the enemy, what was I thinking?!?! Never going back - fat is where it’s at! These babies are packed with healthy fats + protein while low in sugar and carbs, so you’ll be steadily fueled to kick some ass. Love these for a quick pre-workout snack in the morning or post-lunch to hold me over until dinner. You could add any other twists too (more cacao, chia seeds, more spices, vanilla bean - the possibilities are endless!) . INGREDIENTS 1 cup coconut shreds 1/4 cup coconut oil, melted 1/4 cup coconut butter (I used @nutiva coconut manna) 1/4 cup pumpkin seeds aka pepitas 1/2 cup cashews 1/2 cup almonds 3 tbsp cacao nibs 3 big shakes cinnamon 1/3 cup @malkorganics unsweetened almond milk 3 pitted medjool dates (omit to keep sugar free / @whole30 friendly) INSTRUCTIONS Blend everything in a food processor. I had to scrape down the sides a few times. Dough will be a bit wet, that’s okay! Roll into balls (however big or small you like!) then place in freezer to set. I like to keep mine in the fridge for quick snacking, or you can keep in freezer. Let ‘em thaw a bit before chowing down, they’re magic when soft.

My current dinner obsession has been loaded salads SO GOOD! I’m not about those little side salad of lettuce, tomato and lime juice. I like my salads to include different textures, healthy fats, protein, greens, and raw/cooked veggies. Current combo {spring mix • purple cabbage • carrots • steamed broccoli • roasted kabocha squash • tempeh • red beans • avocado} for my dressing I mash the avo with apple cider vinegar, mustard, pink salt and black pepper. How do you like your salad?

LIVER CLEANSING SMOOTHIE ✨ I bet you wouldn’t be able to guess, even if I were to have you taste this, how many vegetables are hidden in here. All with a similar focus ~ to support the liver to detoxify as well as nourish and hydrate the body. I find smoothies a really easy and useful way to increase micronutrient content in your diet, I’m all about shifting the focus off our macro nutrients (carbs, fats, proteins) and onto the micronutrients (vitamins, minerals, phytonutrients, polyphenols), doing this through food over supplementation is how I prefer to achieve this. This particular smoothie has spinach, avocado, cucumber, cauliflower, zucchini & a bunch of herbs and flavors with coconut yoghurt to make for a creamy cleansing meal-in-a-cup. Playing around w some recipes to be included in a book I’m now writing... exciting things in the works ~ WATCH THIS SPACE ✨

I am feeling pretty great, but my eyelids were SO heavy at 3:00 that I ended up dozing while the kids were. I know from previous posts that I felt Tiger Blood around Day 20 in a previous round, but I’m trying to remember each round is different. 🤷‍♀️ Didn’t get to the gym today but spent an hour outside on this snow day and dragged the kids around in sleds and had a snowball fight, so that’s better than zero activity. Made some soba noodles with peanut sauce. I love making peanut sauce because it’s so easy to make and tastes delicious. I also added some shredded carrots and purple cabbage for some veggies and a nice crunch! Recipe for the peanut sauce down below Made this sauce for 4 people but you can always modify it. I used 5 table spoons of peanut butter 2 table spoons of soy sauce and 1 1/2 table spoons of maple syrup About an inch of minced or grated ginger The sauce will come out very thick depending on the peanut butter you use. Afterwards start adding water little by little until the sauce is as creamy as you like. Veggie lettuce wraps, satisfying and delicious 👌🏻Sautéed veggies & cashews in sesame oil with my favorite stir fry sauce: 1/2 c water/stock 2tbs brown sugar 2 tbs aminos 1/2 tsp rice vinegar 1/2 tsp sesame oil 1 tsp organic cornstarch Grated ginger to taste Combine all ingredients in a saucepan, bring to boil reduce to simmer and toss sautéed veggies back in, sprinkle with sesame seeds & chopped scallions.
