dreaming of these pancakes while I study for midterms 😴 these were seriously delicious and kept me full for sooo long! 👍🏼 I think it’s the balance of carbs and protein plus the healthy fats from the peanut butter that make me feel so satisfied 😌 taking a nutrition class has been so beneficial to solidifying my knowledge about basic nutrition! 🤓 college is great because you can take whatever kind of classes you want to really further your knowledge about certain subjects. nutrition is actually a class i’m taking outside of my degree and I totally suggest taking something different from your major that you’re interested in to break up your studies. 📚 and if you’re in high school, take an online class or classes offered in your community! knowledge and wisdom are some of the most important things in life and learning is never going to hurt you! 🌟

Makes about 1 cup of pumpkin pesto
3/4 cup equal parts walnuts, pecans, almonds and pumpkin seeds
6 large, pitted dates
1/3 cup pumpkin puree
2 tbsp pumpkin butter (my fav is @wildly_delicious's)
1 tbsp pumpkin pie spice
3 tbsp maple syrup
2-3 tbsp melted coconut oil
Add all ingredients to a food processor and pulse until blended, adding additional coconut oil as needed to create a pesto texture.
For the flatbread--》Brush a nann pita lightly on both sides with olive oil and place on baking sheet. Spread an even layer of pesto on pita and top with desired toppings- I used spinach, cranberries and sliced apples. Broil on high in oven for 5 to 7 mins or until the edges of the nann are lightly browned, remove from oven. I sprinkled my flatbread with some cinnamon and finished it off with a balsamic drizzle 😍. Enjoy!
Ps. This pesto is SO good spread on toast or used as a dip with apples.
I was taking out frozen banana to make banana bread to find that my frozen banana was actually pumpkin! 🙈 So I winged it and made pumpkin bites. Bites because I was too lazy to wait a whole hour for a loaf to bake. This is delicious with peanut butter!
Healthy Pumpkin Bites
1 1/4 cup spelt flour
1/2 cup oat flour
1/2 cup brown sugar
1 tsp baking powder
1/4 tsp baking soda
1 tsp of cinnamon and ground ginger
pinch of Himalayan salt
1/2 cup pumpkin puree
2 tbsp maple syrup
1 egg or flax egg
1/4 cup olive oil
1 cup almond milk
1 tsp vanilla
Mix A together then mix B together. Add A to B.
Optional: sprinkle in some chia seeds and/or hemp seeds! Top with 1/4 cup walnuts or mix in batter for a crunch!
I baked this in a 8 x11 pan for squares, but you can also bake this as a loaf. If you use a rectangular pan, make sure you line your pan with parchment paper! Else you end up with half the batter stuck to the pan like I did 😣
Bake for 30 mins at 350F (If you want fudgey texture, under bake by 10mins)
