Oh the difference a year can make! On the left I was 220lbs (Christmas day last year) on the right I’m 135lbs. It's Monday!!!! I want to share something I decided to try for the month of December...and that's a monthly meal plan! I sat down (the joke doesn't get old) on December 2nd and planned out 5 meals for each week of the month. It took a lot of brain power and a couple snack breaks but I don't regret doing it! I like the freedom of not having weekends planned as they tend to change anyways so I focused on the week. I won't follow this perfectly and I already swapped meal days depending on my schedule. But I think I'll keep doing this over the next couple months! The 2nd thing differently I did this month was buying all my protein, freezer, and pantry items for these meals. I still will need some fresh items each week but I'm excited for a very stocked freezer! I love planning stuff so this was a fun exercise for me. How do you plan for your dinners? Do you meal plan or fly by the seat of your pants? Or a mixture? I tend to do a mixture actually. I like having a plan but I throw audible meals in there too. #mealprep #beksmonthlymealplan #paleo

Did you know kids can benefit from multivitamins too? This is our go-to multi for the kids. It’s a whole food vitamin (which I love!) and even though they aren’t old enough to swallow pills, I crush them into a powder in the coffee grinder or mortar and pestle. I’ll mix the powder into their breakfast smoothies or avocado bowls. They gobble it up without even noticing and I feel good knowing they are getting enough vitamins and nutrients. You can find this in health food stores.

Today’s concoctions: veggie-loaded rainbow coleslaw and slow-cooked BBQ pulled beef. We loved the slow cooked BBQ ribs I made the other night but it didn’t go very far, so I did the same recipe but with chuck steak. Slow cooked it all day, shredded it, basted and broiled. Yum. Lunch this week sorted 🙌

Weight stigma. Body Image. - Why I no longer promote weight loss in any way. . My own disordered eating started in my late teens with body image issues and dieting. When I finally broke free from it, I let go of the scales, gave myself full permission to eat all foods & focused on re learning my body's hunger & fullness cues. . When I went on to study nutrition first, it gave me good understanding of how food works in the body on a biochemical level, but I still felt that there's more to it than that. Eating is usually not something we do in isolation, it sits in a sociocultural context. . In my earlier days I did do "weight loss without dieting", but never felt comfortable weighing people, especially since I never weigh myself, and had such a complicated relationship with the scales. . When I eventually found Mindful Eating it was like coming home! I love all of it. The kind, curious, non judgemental approach. The spiritual aspect and the practice of learning acceptance, compassion and present moment awareness. . Since I found the Health At Every Size movement about 18 months ago, everything has deepened for me. I am now much more aware of weight stigma & weight bias, social justice issues and the fat acceptance movement. It makes you sit up and think "Is the focus on weight truly about health? Or is it about all but?" . My eyes are totally open to this concept & approach and I cannot go back. . I can now see clearly how harmful weight loss interventions are in so many various ways. Do I want to be part of that shameful concept? No thanks! Especially since it is what messed me up in the first place. . I want my work to be kind, caring & compassionate. I want to empower people to care for themselves, and to enjoy peace & freedom with food & eating. Because we are all worthy & worth it. . Finally... there is a lot of talk about 'personalised eating' these days. I believe this is the path to that. Our bodies do carry the wisdom. We just need to tap back into it. . I’ve been doing these “all the veg” coleslaws up lately as an easy way to get more veggies in. I use the prepared coleslaw mix as a base then add a bunch more stuff.. All up, there’s red cabbage, white cabbage, carrot, shredded beetroot, broccoli stem, capsicum, red onion, kale, and spinach! 👊

They are soft, chewy and 100% grain free (plus the little melted pieces of candy cane make them extra festive!). . Gluten Free Chocolate Peppermint Cookies 1 cup raw, unsalted almond butter 3/4 cup turbinado sugar (sugar in the raw) 1/2 cup of unsweetened cocoa powder 1 tsp. baking soda 2 eggs 1 tsp. vanilla extract 1/8 tsp. peppermint extract 1/3 cup white chocolate chips 5 peppermint candies (crushed) . DIRECTIONS: Pre Heat oven to 350. . In a large bowl, combine almond butter, sugar, cocoa powder, baking soda, eggs, vanilla, and peppermint extract. Mix until all of the ingredients are well incorporated. . Gently stir in the white chocolate chips. . Scoop a tablespoon of cookie dough and drop onto a rimmed baking sheet that is lined with a silat mat or parchment paper. Gently flatten the cookie out a bit and then sprinkle with the crushed peppermint candies. . They do spread once they bake, so I like to make 12 cookies per pan. . Bake for 10-12 minute or until cooked through. Cool and enjoy. . Nutrients per cookie: Calories: 112; Total Fat: 9.2g Saturated Fat: 1.5g; Cholesterol: 24mg; Carbohydrate: 5.9g; Dietary Fiber: 1.6g; Protein: 4.3g

CAULIFLOWER AND CASHEW CURRY for dinner, with the addition of some chickpeas. This was sooooo good and both my kids loved it! My 22 month old has never eaten cauliflower, even though it is served regularly, nor chickpeas but tonight..... there she was picking those things out to eat separately. Just goes to show, never stop offering! My son loved this too as he has always been a big fan of curries but he actually managed to eat around the chickpeas 🙄. I have been struggling to get dinner photos as my kids are usually starving, so making them wait to take a photo isn’t really ideal. I decided I would tonight though and here we have one hangry hand sneaking in to grab a bite! This recipe is another one from @lizzieloveshealthy and I simply cannot fault her food! I’m a little bit obsessed! My kids have eaten everything I’ve cooked from her book and website. I have actually put the link to this recipe in my profile if you’re interested. I recommend you do try it!
