Mushroom soup!! Yum Easy too. Recipe..
I white onion- Sautee
1 pack white mushrooms
1 pack cremini or portobella
Add to onions pushing onions to side
Add thyme fresh or dry. 2 tsp or 10 stalks leaves removed
Add 1tsp arrowroot or tapioca flour to pan and maybe a splash of white or red wine
Add 1 cup veggie stock
Add 1 cup milk of your choice unsweetened
Add some s and p
Blend half and return to pan
Serve with parm cheese or vegan cheese.
