Halfway done with the week! 🤗 —— Chocolate protein banana quinoa: 1 cup quinoa 2 cups milk (I used coconut milk & a little almond milk) 1 mashed up banana Drizzle of maple syrup 1 spoonful @vega_team chocolate protein powder 1 spoonful @vitalproteins collagen peptides Boil quinoa & then simmer until liquid absorbed, add in all the other ingredients & voila! Such a yummy easy breakfast! 2 eggs cooked in tomato sauce. So simple! I warmed up tomato sauce in a pan and when it started to bubble I added two eggs and lowered the heat to medium. Covered the pan and cooked for about 4 minutes. Served with gf toast w ghee. #whitecolourfulplate #healthylunch #healthydinner #sweetpotatoes #sweetpotatofries #sauerkraut #fishrecipe #lunchtime #lunchideas #healthyeats Simple yet super healthy lunch of cod and sweet potato fries Recipe: Ingredients: 100g fresh line caught cod 150g sweet potatoes with skin 50g fresh baby spinach 50g sauerkraut 25g cucumber 5g avocado or olive oil Spices: Pink Himalayan salt Caraway seeds Smoked paprika powder Mild chilli powder Method: Wash and cut the sweet potatoe without peeling the skin Prepare potatoes for baking in the bowl, by mixing them with all the spices and oil Add salt on to the fresh fish (slightly washed and tap dried with paper towel) Bake both - potatoes and fish in the oven under 220 degrees Celsius for 25mins In the meantime, shred/cut baby spinach, add sliced cucumber (with skin on) and sauerkraut to the bowl, mix with hands, no need to add anything else, as sauerkraut juice is a perfect salad dressing, that is sweet, sour and salty all at the same time Once fish and potatoes are cooked, add all to the plate and enjoy!
